Fish with tomatoes and capers



This is a really quick recipe - for those evenings during the week when you are tired, and can't really be bothered to cook but still want something healthy and nutritious for dinner.

1 fillet of firm white fish (e.g. cod, haddock etc.)
olive oil
3-4 cherry tomatoes, sliced
1 tsp capers
thyme
salt and pepper
tin foil

Preheat the oven to 200°C. Place the fish fillet on an oiled piece of foil. Scatter the tomatoes, capers and thyme over it. Season with salt and pepper. Wrap the fish in the foil, forming a loose parcel around the fish. Place the parcel on a baking tray and bake for 15 minutes, until the fish is cooked through. Serve with vegetables of your choice.
